One problem I'm facing at the moment: I need something to make it heavier at the bottom to prevent it from falling over. Any idea what I could use to stabilise it? *unsure*

pour some stevalin into the gab. Its a heavy cement especially for modelling:

Put something on the sides of the cube to get it in the position you want it afterwards an then let it dry....
Maybe add a little sand to the rocks to reduce the amount of flat areas? Also have you consider using strong "lines" or area that represent big floods or other historical "climate changes" (Not sure the proper term). i.e.
